Sugar Cubes and Apples

Pumpkin Muffins


Two ingredients!  That's it.  One cake mix and one 15 ounce can of Pumpkin!   You wont believe how moist they are! 
The mixture will be thick.  It's supposed to be.  Try to get all the dry ingredients blended into the pumpkin.  I thought I might could have sifted the cake mix to make this step a little easier.  It's a bit of a workout! 
I used a 12 cup muffin pan.  I think a 24 small pan would work really well too.  Spray with Pam or some kind of non stick spray, or you can use muffin cups if you prefer.   Bake at 350 for 20 to 25 minutes. 
Yummy!  You can dust with powdered sugar if you like.  I have also used a plain yellow cake mix.  I am going to try spice cake next.  There are endless possibilities!  A friend a work told me these are a Weight Watcher favorite. Two point per muffin!  97 calories! Sweet!

  1. These are really good. Thank you. I just made it with the Angel Food Cake mix I had and it was very tasty. I made a whole batch of mini cupcakes and I still had half of the batter left. So maybe 3 or 4 of them equals 2 points? I will figure it out another time!

    2. If you did the 12 muffins-it is 5 points, not 2 as stated above.

    3. with Angel Food in a Mini muffin pan? You have blow outwards through your lips to release the air before swallowing and then, 2-3 of them can be 2 points!

  2. Hi Guys! Someone asked about the water. I did not use any water. You might add a little and see how it works out. The batter was a little stiff.

  3. How did you come up with just 97 calories per muffin with 12 muffin pan? I used spice cake mix with my pumpkin. My spice cake mix actually has a few less calories than the butter pecan cake mix.

  4. I've used the spice cake with semi-sweet chips - tastes like pumpkin cake. Also used a chocolate cake mix with semi-sweet chips - can't even taste the pumpkin.....kind of like brownies! If you go on the Hungry Girl website, she also has recipes for cake mixes with yogurt or diet soda and tells you which flavor cakes mixes taste best with yogurt or soda. We've been using these for years and love them. Every so often we treat ourselves to a real cake, but we all have a sweet tooth in my family and would like some goodies more than once in a while - so using the pumpkin makes us feel better about it.

  5. I use the spice cake mix and add 1/4 c. water, and nuts. I don't know - they might brown a little better without the water. I'll have to try that sometime. Sometimes I sprinkle sugar and cinnamon on the top. Also very good is the butter pecan cake mix (or yellow) with a couple of ripe bananas, and nuts - always nuts, for me.

  9. Put this through the recipe app. There is no way these are two Smart Points! I suggest you check out the points on any recipe labeled "Weight Watchers" Many are not what they say they are for point values!

  10. HI everyone! I put this through the WW app . The pumpkin is 0 SP, and the cake mix varies in points. It did not have the butter pecan mix so I would have to scan a box of it. I did see that 1oz of Angel food mix is 5 SP. I think this is a great recipe and cannot wait to try it! Thank you for posting it!

  12. I make them every year but in the mini size. i use spice cake (only a few places carry it anymore) and a snack cup of Applesauce. Makes them not as dense. I frost them with cinnamon cream cheese frosting. They are a big hit. Everyone loves the small size so they can just pop them in their mouth.
